Dark Night Mousse

Sleep is not rest. Sleep is repair. This mousse is built for the hours after midnight when your body does its most important work. Dark, deliberate, and done the night before.

Ingredients

  • 80g dark chocolate, min 85% cacao
  • 200ml full fat coconut cream, chilled overnight
  • 1 scoop Second Self Eton Mess
  • 1 tbsp raw honey
  • Pinch Maldon sea salt
  • Fresh raspberries to serve

Method

Melt the chocolate slowly over a bain-marie until it moves like liquid silk. Rest three minutes. Whip the chilled coconut cream in a cold bowl to soft peaks. Fold the chocolate into the cream in three deliberate additions. Add Second Self and honey. Fold until just combined. Stop before it looks finished. Chill for a minimum of two hours. Serve with raspberries placed not scattered. One precise pinch of Maldon on top.

Method

Mix Second Self into the coconut water until completely smooth. Pour over the oats in a wide shallow bowl. Do not stir. Let it settle sixty seconds. Arrange the orange segments in overlapping fans on one side. Scatter pomegranate seeds with intention. Dot almond butter in three places. Finish with honey in one slow circle from the outside inward. A pinch of Maldon at the very end. Eat within twenty minutes of training.

Ingredients

  • 80g rolled oats
  • 1 tin full fat coconut milk, shaken
  • 1 scoop Second Self Eton Mess
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • Pinch fine salt
  • Blackberries and blueberries
  • 2 tbsp full fat Greek yoghurt
  • 1 tsp brown sugar (for brulee)

Method

Combine oats, coconut milk, Second Self, chia seeds, maple syrup, and salt in a wide-mouth jar. Stir with purpose. Seal and refrigerate for a minimum of eight hours. In the morning open without stirring to preserve the set texture. Spoon Greek yoghurt on top in one clean layer. Arrange berries. If you have a small torch, brulee the sugar until it blisters and darkens to amber. Eat cold straight from the jar.

Method

Method

Place the frozen raspberries in the base of a champagne flute. Press them very gently with the back of a spoon. Not crushed. Just woken up. Add crushed ice. Mix Second Self with sparkling water until dissolved. Pour slowly over the ice from a height so the fizz is preserved. Add elderflower. Do not stir. The colour will move on its own. Place hibiscus on the surface. Look at it for a moment before you drink it.
